Sometimes called tenderloin, this very delicate part of the loin produces a tender, moist and flavoursome fillet. Cheaper than a beef fillet, it can still hold its own in terms of desirability and can be used for quite exotic dishes. It can also be cut into medallions making it perfect for dinner party creations.
